Blanca joined the Rutgers Camden campus as the Campus Dietitian in April 2024. She completed her bachelor’s degree in nutrition & food science at Montclair State University in 2021 and completed her dietetic internship with MSU in 2022. She finally became a registered dietitian in October 2022 and got her start in the clinical setting at a local hospital. Before long, the opportunity to be the dietitian at Rutgers came at the perfect time. She had always envisioned herself as the dietitian who helps spread evidenced based nutrition education to communities who may not have the best access but, in a fun, creative way.
Through her health & wellness events, presentations and tablings, she is helping students, staff, and fellow community better comprehend ways to nourish their bodies. In addition, her partnerships with the community have built a strong foundation and trust to effectively communicate nutrition information.
With one-on-one consultations, every session is customized to the individual’s needs and preferences. Whether the student is vegetarian or requires a special diet for medical purposes, her job is imperative to merge the gap between the student and Cooper Street Hospitality. Students with these special needs are heavily encouraged to meet with her, as she also offers dining hall tours to review our menu offerings.
